While I have been baking for quite a number of years I have had many encounters with people who cannot eat baked goods using their standard ingredients for one reason or another. I myself am lactose intolerant and simply do not enjoy overly sweet treats, with exception of Snickers. I have friends, co-workers and customers who require gluten free diets, and have even been commissioned to make an eggless sheet cake.
The reason I decided to start this challenge is because I always want to have the ability to provide my customers and everyone else I care about with goodies they can enjoy. So my goal to work through some recipes and troubleshoot ideas in hopes of creating some delicious options for the many people who's dietary needs deny us the enjoyment of our most coveted cravings.
